I think the word used for wine is dregs, but I'm not sure if that applies to olives.

I found lots of refs. to solids in this context:

I tested the four possibilities on Google, and pomace was the winner (5,410 hits), followed by residue (4,280), leaving solids (28) and dregs (27) in the dust. However, they are all valid, and they all appear to mean the same thing.
