: I'd go with "in water/oil phases", or "aqueous" for a more scientific register. // I have a PhD in surface science and emulsions - I read 100s of papers on the matter - we do NOT use "oleaginous" - ever. We use both water and aqueous in the field.

+ "water phase" = 223,000 hits.
+ "aqueous phase" = 930,000 hits
+ "oleaginous phase" = 35 hits >> we do not use the word "oleaginous" in real English.
Also we use "oil" as an adjective and never "oily" as in the term "oil phase", given that it is 100% oil and not water with a bit of oil; since that's the point, they don't mix.
