: It may be grams as polysorbate 80 (tween 80) is difficult to measure the volume as it is very viscous, it is normally weighed

: Sorry, Jason: 0.25N polysorbate is not the molar concentration (M), but the normal (N) concentration. On the other hand, 0,25N is not the same as 0,25%: or it is 0,25 N or 0.25%: not the two at the same time. Finally, see David's comment - that's true:-)
