What is the appropriate translation of “contaminación” here?
Contamination or pollution?
Why use one term instead of the other?

Pollution ... would be fine in a text about environmental contamination and the like. However, Muriel's point about the specific meaning of contamination in the medical field has convince me that in this case (a CV) the latter is probably the most appropriate choice.

Pollution vs contamination Its tempting to use the English word contamination, but in some contexts, pollution is more appropriate. The following paper gives a useful definition. According to this paper, the difference between pollution and contamination is;

“Contamination is simply the presence of a substance where it should not be or at concentrations above background. Pollution is contamination that results in or can result in adverse biological effects to resident communities. All pollutants are contaminants, but not all contaminants are pollutants.“

In the context of a medical curriculum, I would not use 'pollution', for the reasons given in John's definition.

'Contamination' is widely used in medicine for contexts in which you would never use 'pollution''. For example, contamination with disease pathogens:
