no creo que sea un typo, me parece mas bien que se refieren al sistema que se usa en algunas heladerias en USA donde se colocan los helados sobre una placa de marmol fria (stone) y luego se mezclan con los ingredientes elegidos por el cliente frutas, cremas, etc. Todo esto para mantenerlos congelados y servirlos en forma que no se derritan. Fijate tambien que una heladeria muy importante se llama justamente COLD STONE CREAMERY.
