I acknowledge receipt in the case of private individual clients or when there was a problem with payment and the money came through. However, my main clients have electronic systems, and once a received translation is approved for payment, the rest is automatic. I do not acknowledge payment unless I am specifically asked to. I see no reason to, given that the payment method itself generates documented verification (i.e., a cancelled check, automatically generated e-mail from PayPal, debit entry in a bank account, etc.).
