I can't seem to find a term to call this dessert in English in a short way for a restaurant menu, as you probably know it is made with egg yolks and syrup. Its often, unbelievably, translated as "Bacon in the sky"!

When I translate menus, etc, I usually put the Spanish in italics and a short explanation in brackets.
tocino de cielo (egg yolk dessert)
It has no pork or even lard in it, so references to pig/bacon are misleading.

: I'd go with egg yolk rather than caramel custard as this is a "yema" type of thing rather than a "flan" type of thing. (There's another old convent recipe that translates as "Nun's bellies"!)

I would leave it in Spanish (in italics if you like) and add the explanatory note in parentheses ("caramel custard", "a custard dessert", or whatever you like.
