These are the common translations of "finiquito", and I believe either would be appropriate in this case. Since it is an official document that is being signed, I would prefer "agreement" to "document".

This is the version given in one legal dictionary. Perhaps "deed" might be appropriate for "documento". Is there a "deed of settlement"? More questions than answers, perhaps.

discharge and quitclaim

are both quite standard. The word comes from "fin y quito", the agreement signed between employer and employee in liquidation of the previous working relationship. Its components include: last salary, proportional part of bonuses, separation pay (likely based on seniority), indemnity for any clauses of the CBA and any other pending monetary liquidations, against the statement of the employee that "that's all there is" or something to that effect.
