MENU FROM A RESTAURANT
Este término aparece en varios platos de un menú. Aunque he consultado el glosario y encontré una posible traducción en el caso de crujientes de leche quemada (Creme brulée biscuit crunch) no sé si "crunch/crunches" es adecuado en este contexto. El problema es que en inglés la palabra crujiente es un adjetivo "crispy / crunchy" y no se me ocurre cómo traducirlo en este contexto culinario cuando hace referencia a un nombre:
Zamburinas con crujientes y jugo de carne.
Ceviche fresco con crema de aove y sus crujientes.
¿Alguna sugerencia?

: crackling is usually the crispy skin of some kind of meat, particularly pork. In the general sense for 'crujiente' I would use 'crisp'

As I already replied for the previous question, you cannot hazard a guess with this as there are far too many possibilities to get it wrong.
Perhaps the Chef could send you descriptions of each item and/or photos. I've found both very helpful in the past when guessing has not been an option.
