crujientes

Este término aparece en varios platos de un menú. Aunque he consultado el glosario y encontré una posible traducción en el caso de crujientes de leche quemada (Creme brulée biscuit crunch) no sé si "crunch/crunches" es adecuado en este contexto. El problema es que en inglés la palabra crujiente es un adjetivo "crispy / crunchy" y no se me ocurre cómo traducirlo en este contexto culinario cuando hace referencia a un nombre:

Zamburinas con crujientes y jugo de carne.

Ceviche fresco con crema de aove y sus crujientes.

¿Alguna sugerencia?

I have more information about the ingredients. "Zamburiñas con crujientes de air pork y jugo de carne". Los crujientes son una especie de palomitas de cerdo que denominan "air pork".

@Rick I don't think it will be croutons, as there isn't much space for that kind of thing on a scallop.

My take Zamburiñas con crujientes ... sounds like (small) scallops with bits of crunchy meat, usually ham, but then again,"carne" covers a multitude of sins. I do them in the oven with a small slice of serrano ham on top.

Agree with the other two ... it could be anything.
As I already replied for the previous question, you cannot hazard a guess with this as there are far too many possibilities to get it wrong.
Perhaps the Chef could send you descriptions of each item and/or photos. I've found both very helpful in the past when guessing has not been an option.

Coincido. Probablemente se refiera a alguna verdura crujiente. No creo que ¨cracklings¨funcione aquí porque se trata de frutos de mar. Si estás haciendo este trabajo para un restaurante lo más seguro es que les preguntes a qué se refieren.

@ Sonia Maria He visto varias platos 'con crujientes' y parece que pueden referir a 'crispreads', 'cripsy' + garlic/vegetables etc., 'crackling' cuando es de cerdo y probablemente hay otras posibilidades tambien. Asi que creo que tienes que pedir al cliente el contentido o una descripcion de los crujientes para hacer una traduccion correcta.

Maybe not..but the one recipe I posted was for ceviche with cracklings

neutral Elizabeth Hancock : crackling is usually the crispy skin of some kind of meat, particularly pork. In the general sense for 'crujiente' I would use 'crisp'
