Se trata de un término en castellano, no "chapel=capilla". El contexto es el siguiente:
"[una torre de piedra ] De base cuadrada, remata en un *templete sin chapel*, y en su interior se ubica el bautisterio."
No lo encuentro por ningún lado, será un error? será "chapitel"?

Use of EN chapel meaning capilla would be very odd, I think, and since this is a description of the tower it doesn't fit the context. It must surely be a typo or variant of chapitel, as you suggest. Omissions of a syllable is not implausible. The "templete" is presumably an open section at the top of the tower, like a belfry, resembling a pavilion.
"Templete sin chapitel" in the description of a church tower is quite reasonable:
"La torre constituye el elemento emblemático de la iglesia. Ejecutada en cantería y base cuadrada, aparece rematada por un templete sin chapitel."

A chapitel is not as high as an aguja, but English just uses spire for both, as far as I know.
