: GREEN is not what is supposed to be picked. RAW usually refers to the ripe red coffee bean without processing (red or ripe). Picking green coffee beans is a no-no.

I´m afraid that you will find that the expression "green beans" is used a lot in the coffee business when referring to the unprocessed beans. Many people directly commercialize these beans

parchment coffee OR green coffee
After coffee fruit is processed to remove the fruit pulp, and the seed is dried, you have "parchment coffee" (pergamino). The green beans are covered in a papery shell. This is unprocessed coffee.
From there it is processed to remove the parchment, then you have green coffee (raw, unroasted).
Without more context I can't tell whether your text refers to parchment or green.
My husband and I grow coffee in Costa Rica, and we also run a "microbeneficio" for our neighboring growers. When the coffee goes to storage, it is stored as parchment. When a buyer wants it, it is processed and the green coffee is sent to the buyer for roasting, etc.

If you can give more context, such as the origin of your text--African, Latin American--I could be more precise. African coffee is often dried with the fruit, and cafe crudo would be "dried coffee cherries".
Just wanted to add, saying green coffee does not refer to the fruit. Of course, you pick ripe, red coffee, not unripe green fruit. But, the term green coffee refers to the beans after the parchment is removed, and before roasting.
