The client ask me to leave cerrito as is... So, I put ... "Cerrito" refers to calves coming from other barns. They did not give any other explanation

I found the reference for 'Ganado vacuno' in the 26-volume Diccionario Enciclopédico Salvat I bought in 1984, but I'm surprised that I can't find anything on the Internet.

I was called away but I had come to exactly the same conclusion as Marie. The dictionary entry is as follows:

CERRITOS. Mun. del N. de México, estado de San Luis Potosí; 19.865 hab. en 1970 (10.421 la cab.). Maíz, lechuguilla. Ganado vacuno

I agree with Helena that this is a calf, though I think "cerritos" in her refs is a district in Pereira, Colombia. This could be a typo or variation of "becerrito", so I presume it is just a young male calf.

According to my 37-year-old paper encyclopaedia, 'cerritos' is 'ganado vacuno', though I can't find any references online. Only some videos of a 'subasta de cerritos'.

They're definitely calves but I can't find out whether the term refers to a type of calf or it's a synonym.

I thought that too. However, this is a case study exclusively about calves. That said, the original does have various misspelt words... but that were easy to guess. Any other thoughts on what it might be?
