Neutral  Rebecca Reddin: 'Veal' might put off quite a few guests, which is a large risk when "ternera" is frequently used in Spain to indicate beef in general, not necessarily veal.

  -> Yes - good point and it would be important to know whether this is beef or veal. We certainly separate them in English, and for American tourists, the distinction should be clear.

Discrepo  Yvonne Gallagher: croca is crockpot?!/ Wrong again! Santa Croce is a church and neighborhood in Florence Italy as your latest link shows. This is a restaurant in Spain and it's a Spanish word "crocA"! Why guess meanings of words and mix up languages?

I agree with Rebecca that veal may be off-putting for customers so, though "ternura" often refers to veal, it could also mean beef here. Especially since lasagna is usually made with beef.

But what cut is "croca? Is it really rump? I doubt it. Good mincemenat to be used in lasagna would be from minced round steak . That's what I use anyway.

Still waiting for further input from Asker. Is this 2 dishes or one? Or 2 dishes on the one plate? It would seem that lasagna made with a mixture of chicken and beef would be highly unusual and not very appetising in my view.

Anyway, this may help actually choose the correct cut of meat in English

as for the chicken...well "free range" is obviously a selling point but though coq au vin is a well known dish, we'd normally just say "chicken" in English rahter than specify its gender.

Not something that sounds at all appetising to me and "lasagna" seems to be a complete misnomer for the dish.

It is actually lasagne with both beef and poultry. The reply to the review linked to the photo actually mentions "nuestras nuevas creaciones culinarias", which I guess is as good a description as any for a beef-and-poultry lasagne.
