Para mí, parece más natural decir "to break down" que "to digest", que pone énfasis además al hecho que las páncreas sólo secretan fluídos que facilitan la digestión y que ellas mismas no digireren nada.

I'm afraid that it is a bit tricky to try to substitute a word like "digest" which has a clear definition in medical terms. It is really not worth it. That is exactly the activity described and it is "digestion"
