difficult for the pancreas to break down.
Yahoo Reference-
"Compound gland functioning as both an exocrine (secreting through a duct) and an endocrine (ductless) gland. It continuously secretes pancreatic juice (containing water, bicarbonate, and enzymes needed to digest carbohydrates, fat, and protein) through the pancreatic duct to the duodenum."
Para mí, parece más natural decir "to break down" que "to digest", que pone énfasis además al hecho que las páncreas sólo secretan fluídos que facilitan la digestión y que ellas mismas no digireren nada.

: agree with your point about digestion taking place not in the pancreas, however I'd let the author have it his way, as suggested by Cloudy.

become difficult to digest by the Pancreas
I'm afraid that it is a bit tricky to try to substitute a word like "digest" which has a clear definition in medical terms. It is really not worth it. That is exactly the activity described and it is "digestion"
