"cocina fusión" es "fusion cuisine" en inglés, no es "hot pot".

Personally I quite like the phrase I coined myself '多元菜‘， but it seems "融合式料理" is being used widely.

Sorry, the repetition of "Son esos platillos que combinan varios tipos de cocina" in my response below wasn't deliberate, my machine went crazy temporarily, and before I knew, the comment was sent and I don't know how to undo it. But I stick with 融合式料理, because 火锅 is usually translated as "escalfador" is Spanish.

We say 火锅 in simplified Chinese, and 火鍋 in traditional; hot pot in English, and in French: Cuisine fusion

Daisy is right, it's not 火锅, but 融合菜/融合美食 is more popular in Chinese, see following for reference:
