This relates to Polynomial Regression where there are main effects called grasa butírica/butyric fat/butterfat (x1), inulina/inulin (X2), azúcar/sugar (X3). The authors' notation is a little odd, but what they mean is that x1 is a linear effect, and x12 is a quadratic effect, so the model is [where a, b, c are constants that pop out of the data]: response (y) = a + bx1 + cx12 + other terms which is actually the same as response (y) = a + bx1 + c(x1)^2 + other terms i.e. there's a variable x1 for the amount of butyric fat and another variable x12 for the square of the amount of butyric fat.
