Se trata de una encuesta de mercado sobre el consumo de cerveza, se utiliza el término "locales" para referirse a los establecimientos donde se consume cerveza, esto incluye, en principio, bares, restaurantes, discotecas etc... ¿Alguien me puede decir el término en inglés?

I think they don't have the same connotations as in Spanish. Pub might be the best answer, although pub in the US means Irish or British bar.
If they also serve food ... pubs serve food, not bars.

You may have to go with "establishments that serve alcohol", since a restaurant or pub or bar or cafe (or disco, or theatre, or cinema, or, or, or ) may also serve alcoholic beverages.
