I don't think this is a spreadsheet. It seems to be a paper record of trades signed by buyer and seller and used on the trading floor as confirmation of a trade in the securities market. It's referred to as a "papeleta" or "ficha". It's handed to the market authorities who record the trade.

This sounds like the "trading slips" used in "open outcry" markets where securities are physically traded on the floor, as, for example, in the Hong Kong market:
"In the open outcry system the seller completes a trading slip that includes the selling and buying clearing members, the number of contracts, the month and the price. The trading slip is then signed by the selling and buying brokers. A copy of the trading slip is provided to the HKFE and the HKCC. HKCC personnel on the HKFE floor then key the trade information into the clearing computer system."

It does seem that the "muñeco" is a feature of the "open outcry" trading system and that it corresponds to the trading slip:
"a) OPERACION DE VIVA VOZ O TRADICIONAL. Este tipo de operación se realiza por medio de una propuesta en voz alta, en la que se indica si un operador compra o vende, así como la emisora, la serie, la cantidad y el precio. Cuando se acepta la operación se dice "cerrado" y se procede a formalizar la negociación por medio de una ficha de compra-venta, la cual es llamada "muñeco". Después se entrega la ficha al corro correspondiente para que actualice los monitores."

In the open outcry trading system, orders received by the broker in his office are relayed to the floor trader by phone; the orders are written on slips, time-stamped, and then taken by a runner to the pits, where they are executed. A trading slip is then completed by both buyer and seller, returned to the member’s booth and time-stamped.
The buyer’s and the seller’s slips are entered separately into the SGX Trade Allocation and Registration (‘‘STAR’’) system, which is provided to the clearing members on the trading floor. Once entered into the STAR terminals, the trade details are automatically transmitted to the matching engine in the STAR system which will then match the trade almost instantaneously."
