Here, I used “conical hat”. I´m giving the points to Barbara for the great references, although several people contributed. I didn´t choose the “sugarloaf” option, again because reading it I would get no image of what that might be.

zuckerhut
cone-shaped

Explanation:
Because sugar loaf doesn't sound very stylish...

Pulcinella, a Neapolitan character, who is still present in dialectic and puppet theatre, could take on a variety of roles. At times he was a servant, on other occasions the landlord of a tavern or a merchant. He was a mixture of foolishness and shrewdness, of wickedness and fine sentiments, of intelligence and bluntness. He had a huge hooked nose, a hump, and wore a white costume, a wide cone-shaped hat and a black mask with its beak-like nose.

sugarloaf hat / coppolone

Explanation:
AS SUGGESTED BY JONATHAN !
First, a Google image search gives you this image of said hat in said painting:
http://www.brownfieldperry.com/1066/collections/collections....
(scroll down)
Then, the Duden/Oxford pictorial dict. shows a similar hat worn by a "Burgundian"
Google "Burgundian" + "sugarloaf" and hey presto:
http://www.personal.utulsa.edu/~marc-carlson/cloth/hat1.html

And there are various refernces to Pulcinella wearing the sugarloaf aka "coppolone".
