drawing water out My understanding: the equipment/method used to draw water from wherever it is underneath. The pump pressurises the water to make it a running water supply, there's a presure switch to make the pump stop and start whenever water is drawn from the household taps and faucets.

Sorry but water supply would not be Dispositif de prélèvement which has a specific meaning in French. It would be système de pompage or the like.

The activities could be anything from asbestos removal to working with GMO material. I.e. the premises have to be approved by local authority.
Perhaps "water supply" would cover all eventualities.

I think it means how the water is extracted from the mains or other supply, which is why the next line asks if it has a pump. But I'm not clear what the "ouvrage" is, or what you mean by "environment and ecology/classified activities", both of which may affect the translation. Is this something to do with monitoring pollution?
