Greetings,
Ghee is describe here:
http://en.wikipedia.org/wiki/Ghee
If there is no specific word for “ghee”, please give me the word for “clarified butter”, which will, I think, be close enough for my purposes:
http://en.wikipedia.org/wiki/Clarified_butter
Incidentally, I recently came across the term “dövme tereyağ” used as an ingredient for künefe (“künefe” is the word used for kadayıf with cheese inside it, at least here in Izmir) – perhaps this fits into the equation somewhere.
All the best, and many thanks,
Simon

işlenmiş Hint tereyağı / Hint tereyağı
The ghee is obviously indian. Processed differently from the regular butter (including dövme tereyağı). Therefore, a distinct definition/term would be needed.

When I look at the definition of clarified butter, I see that it is simmered, melted and all its water evaporated, thus making it pure. Yet, tereyağı is not processed the same way, which in turn makes Ghee distinct and peculiar to the Indian subcontinent.

Also, Babylon and Tureng defines it as "Hint hayvansal yağı", but I disagree with that definition because it does not provide any clue about the "processing" detail of Ghee.
