Translation - English He turns to the door, goes to the threshold; spits the sample out onto the pergola in a liquid stream. Source text - Italian Per nulla disturbato dalla nostra presenza e dai colpi di flash, il lionfish resta immobile a mezz’acqua muovendo impercettibilmente solo la sua pinna caudale. Dopo pochi secondi lo spettacolo è scontato. Un piccolo pesce cardinale iridescente, probabilmente ingannato dall’immobilità del lionfish ed accecato dalla luce, quindi per nulla preoccupato per la sua incolumità, entra nel cono di luce passando proprio a pochi centimetri dalla testa di chi, a sua insaputa, lo stava aspettando. Non faccio neanche in tempo a rendermi conto della sua presenza che il lionfish in una frazione di secondo fa un balzo in avanti spalancando esageratamente la bocca. Per la velocità del movimento è impossibile rendersi subito conto di quello che è successo, ma la scomparsa del piccolo pesce cardinale ed un pezzettino di pinna caudale che fuoriesce dalla bocca del lionfish sono le prove di quello che è successo. Dopo un paio di secondi, con un altrettanto veloce movimento, anche di quell’indizio, non resta più traccia e come se niente fosse il lionfish riprende la sua posizione d’attesa.
Translation - English Totally undisturbed by our presence or the camera flash, the lionfish remains immobile in the water, just imperceptibly moving its caudal fin. After a few seconds its invisibility act pays off. A small iridescent cardinalfish, probably misled by the immobility of the lionfish and blinded by the light, and therefore not worried for its safety, enters the beam of light, passing just a few centimetres from the head of the fish lying unsuspected in ambush. I do not even have time to realize it is there before the lionfish makes a split-second leap forward, opening its mouth exaggeratedly wide. The movement is so fast it is impossible to understand at once what has happened, but the disappearance of the small cardinalfish and a sliver of caudal fin protruding from the mouth of the lionfish provide the evidence. After a couple of seconds, with that clue disappearing equally fast, there is no trace and, as though nothing has happened, the lionfish resumes its wait.

Il Chianti è un vino rosso toscano conosciuto in tutto il mondo, la sua zona di produzione si estende tra le province di Firenze e Siena.
Le uve con cui viene prodotto sono 80% di Sangiovese, 10% di Canaiolo, 5% di Colorino e 5% di Trebbiano come prevede il primo disciplinare del Chianti. Le uve a bacca bianca sono state proibite a partire dalla vendemmia 2006 e i rendimenti massimi diminuiti.
La denominazione del Chianti è comparso ufficialmente per la prima volta nel 1398 e nel Quattrocento era il vino maggiormente venduto nella repubblica fiorentina e nel Seicento era già esportato con successo in Inghilterra.
Nel 1924 venne fondato il primo consorzio di viticoltori in Italia del Chianti e decisero di adottare come simbolo Il Gallo Nero della Lega militare del Chianti che risale al XIV secolo.
Nel medioevo fiorentini e senesi discutevano su tutto, cultura, potenza militare, ricchezza, con battaglie continue per la conquista dei territori.
Una leggenda racconta che fiorentini e senesi per decidere dove fissare il confine fra le terre preziose dell’attuale Chianti, fecero partire due cavalieri di buon mattino al galoppo l’uno verso l’altro e nel momento preciso in cui cantava il gallo.
Ognuno dei due schieramenti scelse la propria strategia per conquistare la vittoria ed aggiudicarsi più terre possibili.
I senesi scelsero un gallo bianco che riempirono di cibo allo scopo di farlo addormentare presto e farlo cantare a squarciagola il mattino presto, i fiorentini invece scelsero un gallo nero che però tennero praticamente a digiuno.
Il gallo nero, decisamente affamato, si svegliò molto prima dell’alba iniziando a cantare prestissimo e permettendo al cavaliere fiorentino di partire molto prima del suo antagonista che purtroppo perse molte terre. I due cavalieri infatti si incontrarono a pochi chilometri da Siena.

Chianti is a red Tuscan wine of worldwide fame, with its main production zone, Chianti Classico, lying between Florence and Siena.
The varieties from which it was originally made are Sangiovese (80%), Canaiolo (10%), Colorino (5%) and Trebbiano (5%), as laid down in the first regulations for Chianti. The white Trebbiano variety has been forbidden since the 2006 vintage and maximum red-grape yields have been reduced to improve the wine’s concentration.

Each side chose its own strategy for winning and gaining as much territory as possible.
The Sienesi chose a white cockerel, which they stuffed with food to make it go to sleep early and start crowing at the top of its voice first thing next morning; the Florentines, on the other hand, chose a black cockerel which they hardly fed at all.
The black cockerel, absolutely famished, woke up well before dawn and started crowing straight away, allowing the Florentine rider to leave well before his opponent, who unfortunately lost a great deal of territory. The two riders actually met just a few kilometres from Siena.
