su google in tedesco ho trovato un\'espressione del tipo \"avvolgere in Bauchscheiben\" che mi avrebbe ulteriormente indotto a pensare che trattasi di pancetta, usata anche per avvolgere altri cibi per insaporirli.

agree  Laura Di Santo: in effetti la "pancetta marinata" è inusuale, però guardando i tagli di carne in DE e IT il pezzo è proprio quello
