I'm not quite sure exactly what "flächig" means here. The word can mean "two-dimensional", and there is such a thing as "two-dimensional separation", but I don't think that applies to separating dental crowns from teeth.

I'm wondering if maybe it's "extensively"? Feel that would make the best sense in this context, but need confirmation (or correction, as the case may be) to be sure. TIA for your help.

This is obviously not literal, but what they mean is that with these alloys, the crowns can be separated in one piece with the crown cutters, i.e. they will not break.
