GUIGNOL :
Pièce fixée sur une gouverne, perpendiculairement à son axe et qui transforme le mouvement de translation d'une commande, transmis par un câble ou une tige rigide, en mouvement de rotation de la gouverne autour de son axe.
En modèle réduit, ils ont en général une forme triangulaire, une des bases du triangle fixée à la gouverne, le sommet opposé étant percé d'un trou dans lequel se branche la tige de commande où passe le câble de commande.

c) Les efforts du pilote utilisés pour le calcul sont supposés agir aux poignées ou pédales de commande appropriées comme ils le feraient en vol, et sont supposés réagir à l'endroit des fixations du système de commande aux guignols des gouvernes.

guignol is a French and specifically Lyon glove puppet somewhat equivalent to Mr. Punch (not originally for children, political satire).
From juliebarba's answer and context I would take guignol to be referring to the form/shape of the 'handle' (just as horn is) rather than needing translation in itself.
