"This boned leg of lamb is butterflied so that it cooks quickly on the barbecue, remaining tender and rare inside."

Ich weiß zwar, was "to butterfly" _bedeutet_ (nämlich das Fleisch so weit aufschneiden, dass es an der Unterseite gerade noch verbunden bleibt, so kann man es dann aufklappen - wird z. B. auch mit Garnelen gemacht), aber eine vernünftige Übersetzung dazu fällt mir nicht ein. In den englisch/deutschen Referenzen wird es im Deutschen meist einfach weggelassen. Hat jemand eine Idee außer "aufgeschnitten"?
