Just thought I'd mention to Carol that the University in Salamanca, is one of the oldest in Europe founded in 1218. And when it was founded, there was already a university in Palencia.

"Exposition" is another possibility, if you don't like 'treatise'.

Treatise on the Nature and Quality of Chocolate"

There are more modern ways of putting it (Chocolate - Its Nature and Quality), but this fits best with the original, considering its publication date.
