Me gusta/quiero conocer a más latinoamericanos/gente de Latinoamérica
By saying "extend", I assume the person has already met Latinamericans and would like to meet some more

Me gusta conocer mejor a la gente lationaomericana.
This is a different interpretation of the phrase "to extend my acquaintance". I believe that the reference is to people s/he is already acquainted with, and enjoys getting to know better. This would explain the use of "I like" rather than "I would like".
