A produção de jabuticaba não é uma atividade agrícola organizada mas as árvores crescem por todo o território brasileiro, com um importante mercado tanto para o consumo de frutas frescas quanto para o de processamento de produtos como geléias e geleiadas, frequentemente com adição de pectina cítrica uma vez que a disponibilidade de pectina de maçã ainda é incepiente no país. Recomenda-se a remoção parcial da epiderme, pelo menos 50%, das frutas para diminuir o forte sabor amargo devido ao excesso de taninos. As frutas podem ser usadas também, embora em pequenas quantidades, como matéria-prima para o processamento de bebidas como vinho e destilados, atualmente não mais restrito à população nativa mas divulgada em todo o país. Extratos das frutas são usados para melhorar o sabor da popular aguardente, obtida a partir da cana-de-açúcar, uma bebida fermentada e destilada que pode conter um grau alcoólico de 48oGL (Figura 2).

Para comparar o elevado conteúdo de compostos polifenólicos da Eugenia cauliflora, foi feita uma pesquisa na literatura para da suporte a uma abordagem experimental sobre seus compostos fenólicos e sua capacidade antioxidante..
Antioxidantes polifenólicos naturais
Os danos oxidativos no corpo humano tem um importante papel na iniciação e desenvolvimento de doenças (Jacob & Burri, 1996). Aqueles causados por radicais livres e por espécies de oxigênio reativos tem sido ligados a algumas desordens neuro-degenerativas e câncer, e a oxidação de lipoproteínas de baixa densidade é o maior fator de promoção de doenças cardíacas coronarianas (DCC) e aterosclerose (Steinberg, 1997). Dietas ricas em frutas e olerícolas, e com baixos teores de colesterol e gorduras, são inversamente correlacionadas com a incidência de doenças cardíacas coronaianas e câncer. Tais antioxidantes naturais promovem proteção adicional diminuindo o processo de danos oxidativos (Jacob & Burri, 1996).

The production of Jaboticaba is not an organized agricultural activity, but the trees grow all over Brazil, and have an important market, both for the consumption of its fruits and for the processing of products such as jellies and jams, often with the addition of citric pectin, since the availability of apple pectin is not yet widespread in the country. The partial removal of at least 50% of the epidermis from the fruits is recommended, to diminish the strong bitter flavor caused by the high amounts of tannins. The fruit can also be used, albeit in small quantities, as the raw material for producing drinks such as wine and distilled spirits, which are no longer restricted to the native population, but are now popular throughout the country. Extracts of the fruit are used to improve the flavor of the popular aguardente (a spirit obtained from the sugar cane, a fermented and distilled drink that can have an alcohol content of up to 48oGL (Figure 2).

To compare the high content of polyphenolic compounds of Eugenia cauliflora, a literature review was carried out, to support an experimental approach to its phenolic compounds and anti-oxidant capacity.
Natural Polyphenolic Antioxidants
Oxidative damage in the human body plays an important role in the onset and development of diseases (Jacob & Burri, 1996). Diseases caused by free radicals and reactive oxygen species have been linked to some neurodegenerative disorders and cancer, and the oxidation of low density lipoproteins is the primary factor causing coronary heart disease (CHD) and arterioscleroses (Steinberg, 1997). Diets rich in fruits and vegetables, with low levels of cholesterol and fats, are inversely correlated with the incidence of coronary heart disease and cancer. These natural antioxidants provide additional protection, decreasing the process of oxidative damage. (Jacob & Burri, 1996).

Do I need a Student F-1 Visa to attend?
No. The U.S. State Department has stated that if you are coming to do a short course of less than 18 hours per week, you may be able to do so on a visitor visa. Therefore, because of our course of studies are no more than 18 hours a week, you will not need a Student F-1 Visa to attend our school.
How long is one term? When can I start the program? When can I begin a higher level of English?
One term is 4 weeks long. New students start every Monday so you can begin on any Monday that is convenient for you. Before you go on to a higher level of English, you must take two consecutive 4-week terms or have a passing grade on a pre-requisite English exam.
How much is the tuition and books?
The tuition cost is $725.00 and the books are $35.00 - $100.00. The other fees include a non-refundable application fee of $100.00, an optional deposit tuition fee of $200.00 which guarantees your space in the program.
Where will I live during my visit to California?
We recommend that you take the opportunity to live with an American host family (home-stay). We will place you with a suitable host family with similar interests. However, if you prefer, we can also recommend extended stay hotels or dormitory living. Students can also make their own accommodations.
