Enjoy crispy, moist fried chicken guilt free on a bed of greens with buttermilk dressing.
Ingredient:
For the chicken:
2 pounds chicken breast, equal size
1 cup salt
1/2 cup sugar
4 cups water
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon pepper
1 teaspoon salt
1/2 teaspoon cayenne
1 tablespoon garlic powder
1 tablespoon onion powder
3 cups canola oil
For the salad:
4 romaine heads, rinsed and rough chopped
2 carrots, peeled into ribbons
2 Persian cucumbers, cut into 1/4-inch diagonal pieces
1 fennel bulb, shaved
2 scallions, chopped
1 bunch dill, picked
1/2 cup blue cheese, roughly crumbled
1 lemon, halved for juice
1 teaspoon salt
For the dressing:
1 bunch dill, chopped
4 chive stalks, chopped
2 garlic cloves, grated
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lemon
4 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 cup buttermilk
Steps:
For the chicken: In a large bowl, combine the salt, sugar and water into a large bowl. Add chicken breasts and brine for 2 to 12 hours. Rinse and drain on paper towels.
In a large bowl, combine flour, baking powder, pepper, salt, cayenne, onion and garlic powder. Dredge the chicken in the flour mixture one at a time until well coated.
Pour canola oil into a skillet and heat to 350 degrees. Fry the chicken in the hot oil until golden and crispy. Transfer to a wire rack to drain. Season with salt.
For the salad: Clean romaine leaves and rough chop.
Slice cucumbers, shave carrots and fennel, chop scallions and pick dill. Set aside ingredients until assembly.
For the dressing: In a large bowl, mix all ingredients together except for the buttermilk. Slowly whisk in buttermilk.
To assemble the salad: Cut fried chicken into 2-inch pieces, a little bigger than bite sized.
Toss all vegetables together, reserving the dill and scallions for topping. Sprinkle salt and squeeze a little lemon on the salad and toss. Add 2 tablespoons of buttermilk dressing at a time until salad is well coated. Plate the greens on a large platter. Pile the fried chicken throughout the greens. Sprinkle the blue cheese and herbs and serve.
Translation - Indonesian Nikmati ayam goreng yang renyah dan lembut, di atas hamparan sayuran hijau dengan saus buttermilk – tanpa harus merasa gendut!
Bahan:
Untuk ayam:
900gram dada ayam, yang beukuran sama
220gram garam
110gram gula pasir
950mililiter air
330gram tepung terigu
1 sendok teh baking powder
1 sendok teh merica
1 sendok teh garam
1/2 sendok the bubuk cabai
1 sendok makan bubuk bawang putih
1 sendok makan bubuk bawang bombai
700ml minyak canola
Untuk salad:
4 bonggol selada romaine, telah dibilas dan dipotong kasar
2 wortel, diparut menjadi potongan pita
2 mentimun Persia, potong diagonal berukuran 1/4 inci
1 adas, dicukur
2 daun bawang, cincang
1 sdm dill, petik daunnya
55 gram keju Blue, hancurkan kasar dengan tangan
1 lemon, dibelah dua untuk diambil sarinya
1 sendok teh garam
Cara:
Untuk ayam:
1. Dalam mangkuk besar, campur garam, gula dan air. Tambahkan dada ayam dan air garam, dan rendam selama 2 sampai 12 jam. Bilas dan tiriskan dengan tisu dapur.
2. Dalam mangkuk besar lain, campurkan tepung, baking powder, lada, garam, bubuk cabai, bawang merah dan bubuk bawang putih. Keringkan ayam, masukkan ke dalam campuran tepung, dan lapisi setiap potongan ayam dengan baik.
3. Tuangkan minyak canola ke dalam wajan dan panaskan sampai 180 derajat, dan goreng ayam sampai berwarna keemasan dan renyah. Setelah matang, pindahkan ayam ke rak kawat untuk menyingkirkan sisa minyak. Bumbui dengan garam.
Untuk salad:
1. Cuci selada romaine dan cincang kasar.
2. Iris mentimun, cukur wortel dan adas, cincang daun bawang dan pilih dill. Sisihkan bahan sampai rakitan.
Untuk saus dressing:
1. Dalam mangkuk besar, campurkan semua bahan, kecuali buttermilk. Lalu, perlahan-lahan, campurkan buttermilk.
Untuk membuat salad:
1. Potong ayam goreng menjadi potongan 2 inci - sedikit lebih besar dari ukuran gigitan.
2. Campur semua sayuran dalam mangkuk, tapi sisihkan dill dan daun bawang untuk topping. Taburi garam dan peras sari lemon dan aduk rata. Tambahkan 2 sendok makan saus buttermilk sampai salad tercampur rata.
3. Susunsayur-mayur dengan piring hidang yang besar. Tambahkan ayam goreng di atas sayuran hijau. Taburi keju biru dan rempah-rempah dan sajikan.
