RESUMO: Neste artigo serão abordadas algumas observações a propósito da culinária em Dom Quixote, obra que dá início ao romance moderno na literatura universal. O contexto histórico e social da Espanha imperial no qual se insere, e que contrapõe o mundo oficial triunfante à miséria e à pobreza reais que padece a maioria da população – quadro que já começou a ser desenhado no Lazarilho, onde o que prevalece, antes do que a comida, é sua falta, a fome ­–, encontra a culminação no contraponto de duas personagens que dialogam desde perspectivas opostas: dom Quixote – idealista, herdeiro da velha tradição espanhola, representante de uma nobreza em franca decadência – e Sancho Pança – pragmático, que representa a tradição popular de um rústico ‘homem de bem’ –, tudo às portas do que apenas um século depois representarão na Europa as ideias do Iluminismo e ainda da Revolução Francesa. Nesse contexto, as atitudes dos protagonistas com relação à comida irão desenhando a personalidade de cada um, mas, sobretudo, o que é mais importante, do que eles vêm simbolizar. Por fim, a multiplicidade de gêneros literários que Cervantes conjuga ao longo do romance permitirá ricas contribuições do ponto de vista cultural, pois denotarão os hábitos culinários da Espanha e não necessariamente circunscritos apenas à época em do relato.

BSTRACT : This article deals with some observations on the cuisine in Don Quixote , a literary work which is responsible for the beginning of modern novel in world literature. The historical and social context of the Imperial Spain in which it is placed, and also opposes to the official world which is triumphant to actual misery and poverty that affect the most part of the population – a framework that already started to be designed in Lazarilho , where the prevailing thing before food is its lack , the famine – and it reaches its culmination in a counterpoint between two characters that dialogue from opposing perspectives : Don Quixote – an idealistic heir of the old Spanish tradition , a representative of a nobility in full decadence - and Sancho Panza – a pragmatic person who represents the popular tradition of a rustic ' honest man ' - all before things that only a century later in Europe would represent the ideas of the Enlightenment and the French Revolution as well. In this context, the attitudes of the protagonists in relation to food will trace the personality of each of them but also will trace - above all of these - what is more important, what they come to represent. Finally, the multiplicity of literary genres that Cervantes combines throughout the novel grants precious contributions from the cultural point of view, because they denote the culinary habits of Spain which are not just necessarily bounded to the time of this report.

RESUMO

Este trabalho apresenta a investigação, de natureza exploratória, realizada com o objetivo de conhecer o ensino da ética no presente da implementação das diretrizes curriculares da formação em Serviço Social, a qual foi efetivada junto a onze unidades de ensino da região nordeste do Brasil, sob o pressuposto que esse ensino conforma um tensionado padrão cultural no qual os fundamentos da Teoria Crítica comparece com centralidade. Tensão provocada pela hegemonia do conservadorismo no âmbito da produção material e espiritual da vida social. A estruturação dos capítulos está organizada da seguinte forma: o primeiro e o segundo circunstanciam a hegemonia do pensamento conservador no ambiente socioeconômico, teórico, político, cultural das últimas décadas – seus conteúdos tratam da relação existente entre a formação profissional e os processos macroscópicos da vida social. Também abordam as principais características do pensamento ético na contemporaneidade. O terceiro aponta os marcos e questões vivenciados pelo Serviço Social brasileiro, no campo da formação, particularmente no que diz respeito ao ensino da matéria ética, a partir da proposta de currículo mínimo elaborada pela categoria profissional, em 1996, a qual referenciou as diretrizes curriculares vigentes. O quarto e último capítulo apresenta a pesquisa propriamente dita, cujos resultados confirmam a pressuposição inicial. É inconteste que a aproximação do Serviço Social aos fundamentos da teoria crítica conferiu um rumo novo ao ensino da ética – o que não é sinônimo de ausência de dificuldades a serem superadas em seu processo de consolidação, a exemplo das de ordem teórico-metodológicas.

ABSTRACT

This paper presents an explanatory research by nature, conducted in order to understand the teaching of ethics in the present implementation of curricular guidelines for training in Social Work, which was carried out in eleven teaching units in northeastern Brazil, in the assumption that education forms a tensioned cultural pattern in which the fundamentals of Critical Theory is centrally perceived. Tension caused by the hegemony of conservatism in the framework of material and spiritual production of social life. The structure of the chapters is organized in the following way: the first and second ones provide circumstances for the hegemony of conservative thinking in the socioeconomic, theoretical, political, and cultural environments in the past decades - their contents deal with the relationship between professional training and macroscopic processes of social life. Those chapters also discuss the main features of ethical thinking in contemporary times. The third chapter shows the milestones and issues experienced by the Brazilian Social Work in the field of training, particularly in regard to the teaching of the subject ethics, based on the proposed minimum curriculum developed by this professional category in 1996, which has referenced the current curriculum guidelines. The fourth and final chapter presents the research itself, whose results confirm the initial assumption. It is incontestable that the approach of Social Services to the fundamentals of critical theory conferred a new direction to the teaching of ethics - which is not a synonym for the absence of difficulties to be overcome in its process of consolidation, such as those of theoretical-methodological order.
