1l de aceite
4 lomos de bacalao de 220g
Ponemos el aceite en un caldero y lo calentamos hasta 60º (justo antes de que rompa el hervor), apagamos el fuego e introducimos los 4 lomos de bacalao. Con el calor que tenga el aceite se harán

Infusionar significa calentar algún líquido con otra substancia de tal manera que una vez retirada esa substancia quede su sabor e incluso su color en el líquido. Fijaos que no he puesto agua sino líquido.

En el caso del aceite es diferente. El aceite no debe llegar a hervir (o humear), sino se fríe y empieza a segregar grasas saturadas que no dan buen sabor a un aceite para aliño. Lo que se tiene que hacer es infusionarlo de la misma manera pero siempre manteniendolo por debajo de su temperatura de ebullición (desde 190ºC hasta 242ºC, dependiendo del refinamiento del aceite de oliva). Es más como un confite, confitar el aceite.
De hecho se considera infusión mientras no llegue a hervir, si ya hierve hablamos de cocción.

или лучше с конкретикой - треска, томленая в молоке (или в масле). Не скажешь же про рыбу "дать настояться":)

На мой взгляд, это кулинарный термин, который ближе всего к оригиналу в данном случае, т.к. означает не только тушение на очень слабом огне, но и выдерживание продукта в какой-либо среде при медленном остывании.
