agree  Jennifer Levey: Hmmmm... Errr... well, yes. Although 'gutter' is also the name of the space between columns on a single page. If this publication doesn't have text in columns the problem is irrelevant.

Methinks the source text is using 'canal' in two different ways:

Canales*: La masa se deberá llevar de 10mm a 15mm de cada lado del canal

Inner margins: The (whatever you want to call 'masa') shall extend between 10 and 15 mm from the fold.

'fold' assuming it's either a single folded sheet or a stapled binding; otherwise, 'from the bound edge'.
