This is my interpretation:

"The waiters don't move about in a disorderly or random fashion as in most restaurants. It can be seen that they follow a strict order and a path frequency clearly optimized."

Coincido  Anthony Mazzorana (X): I think it needs to sound mathematical in English as well. I like the idea of keeping "frequency of trajectories" in the translation.
