None. Confusing context: 'what we produce' should describe a physical product, which would then be shipped anywhere... If it's a simple process, it can be applied... But like voltage, it can also be 'stepped up', i.e. adapted to suit scales of operation larger than those in the Galapagos.. Perhaps not the right choice of word by the original writer.

for applied, read 'adapted' (to anywhere..). 'Scaled up' would also work -- but not 'scaled', which sounds like one of those incoherent corporate linguistic abortions (e.g. to 'grow' a business). A scale is on the side of (some) fish, and 'descaled' means to have the scales rubbed off.
