Gambero Rosso
Il gambero rosso (Aristeomorpha foliacea) è lungo circa 10/18 cm ed è frequente nel Tirreno, dove vive a profondità da 400 a oltre 1000 m, su fondali fangosi. Ha un rostro munito di cinque o sei denti (il gambero viola ne ha tre). La pesca avviene in tutte le acque profonde dei mari italiani. Il colore brillante vivo lucido ne attesta la freschezza e cosi gli occhi lucidi e sporgenti e le carni bianco rosate.

Il Gambero viola (Aristeus antennatus) ha una corazza munita di spine, che ricopre la parte anteriore del corpo, cinque paia di appendici, che usa per nuotare, sono poste sull'addome che termina con una coda a ventaglio. Sulla corazza ha un rostro sotto il quale, su un peduncolo, sono presenti gli occhi. Lungo circa 15 cm, vive a grandi profondità, anche oltre i 1000 m, è di colore rosso o roseo con sfumature violacee nella parte superiore e addominale. E' catturato da grosse barche con le reti a strascico in Liguria, Sardegna, Sicilia e Ionio. Il gambero viola fresco è di colore rosso vivo con lucenti sfumature viola, se invece il colore è spento e i segmenti del corpo staccati, è stato pescato da più giorni o mal conservato.
