(a) superbly extracted (champion, thoroughbred) Explanation: The extract (non-volatile solids) referred to comes from the grape and contributes to the body, flavour and colour of the wine. The purely descriptive "highly extracted" might be interpreted as a defect (over-extraction). A value judgement like "superbly" is probably better here. HTH Giles |
