"Per "caccia di selezione" si intende correntemente un tipo di caccia basata sul rispetto di un piano preordinato di abbattimento, diviso per classi di sesso e di età e redatto in base a censimenti e stime secondo un criterio scientifico. Un tipo di caccia quindi, che consente al cacciatore di operare una scelta del capo da abbattere. Si deve considerare la selezione come una parte essenziale della gestione delle popolazioni di ungulati selvatici. "

Taken from the 700-page bible on the topic, i.e. "Game Ranch Management" (see link with term harvesting). Section 10.4 in the book is "Selective harvesting of social, age and sex groups", which is exactly what you seem to be looking for.

"Selective harvesting" is a horrible term, the idea of harvesting animals as if they were wheat or tomatoes, but it is the one used specifically for this idea of herd-thinning

Francesco, your source text says "caccia di selezione" but your question says "cacciatore di selezione" which to me does not make much sense.
