Explanation:
This is a classic Sicilian recipe, the origin of the name is unknown, but I am afraid it is NOT cooked in seawater(!!)
It is actually cooked in white wine with small tomatoes, parsley, garlic, chopped onion, olive oil - at most a small amount of water can be added if the wine evaporates too much, and of course salt to taste:

I`ve got no idea of what they use . It`s great but it doesn`t taste like seawater neither like white wine. But I saw it nowhere else than in Sicily

QUINDI, rather than name it poached fish... I would use the original 'national' term: acquapazza or 'crazy water'
