Not sure exactly what they mean here. This is an academic paper referring to an early description of excavations near a temple. In the context I would have thought this to be the excavation area, were it not for the preceding words in the text: lo sterro del piano di coltivazione. This has confused me. The paragraph reads like this.

Dai sondaggi effettuati negli anni ‘70, si è avuta conferma che si riferiva allo sterro del piano di coltivazione dell’area ovest dell’antica cava che, in alcuni punti, risulta essere effettivamente più basso di oltre sette metri rispetto a quella che doveva essere la quota di calpestio del tempio.

Thanks a million everyone. 'the excavation of the exploitation level' is quite a mouthful but it now makes sense to me and fits with other references in the same paper.
