In this work we have made an attempt to produce low-alcoholic beer (<2 V/V%) by trying out other “special” yeast strains, and by applying them in mixed culture with a well characterized brewer’s yeast strain (Saccharomyces cerevisiae WS34/70). Three strains were chosen: Saccharomyces exiguus, Saccharomyces delbrueckii and Torulopsis delbrueckii. Egyébként a fajélesztő hozzáadása nélküli erjesztés neve "native fermentation" vagy "natural fermentation", tehát olyan változat is elképzelhető hogy "undergoing natural fermentation in barrels".
