Der primäre Stoffwechsel dient den Pflanzen zum Aufbau organischer Substanz in Form von Kohlenhydraten (einschliesslich Nahrungsfasern), Fett und Protein. Im sekundären Stoffwechsel der Pflanzen wird eine Fülle von Stoffen produziert, deren Funktion innerhalb der Pflanzen - bis auf die Vitamine - teilweise noch wenig erforscht ist. Diese Stoffe nennt man sekundäre Pflanzeninhaltsstoffe.

Zu ihren bekannten Funktionen in der Pflanze zählen ihre Wirkungen als Farbstoffe, als Abwehrstoffe gegen Schädlinge und Krankheiten, als Aroma- und Farbstoffe, sowie als Wachstumsregulatoren.
