Explanation:
In the world of wine writing, anything goes. I once read of a 20-year-old Riesling that its "tree-ripened capsicum hints have broadened into asparagus overtones".... Go on! Dare to be literal!

The alternative "delicately structured" is offered as a cop-out if you lack the intestinal fortitude. People really do talk about the "structure" of wines, you know.
