You might have to leave this one as "Ehrbarkeit" and add a translator's note. I don't know of any similar tradition (in the UK at least). I think it is a thin, black tie with a pin to indicate the particular guild the wearer belongs to and is worn by a "journeyman" or tradesman on his traditional journey of 3 years and 1 day. I remember reading somewhere that they even have/had to wear it when they are sleeping!

Ganz besonders wichtig ist die Ehrbarkeit, bei der es sich um ein krawattenähnliches Stück Stoff handelt, welches, je nach Schachtzugehörigkeit, eine andere Farbe hat (siehe auch den Bericht: Die Zünfte) und mit einem Handwerkswappen (eine Stecknadel) am Hemd befestigt wird.

I guess you'll have to transcribe, as it's unlikely that there is a corresponding English term (it has something to do with honorableness).
