Respectively flow behaviour, if it's British English. Your flow characteristics or even flow properties would also be fine although that would be more towards "Fließeigenschaften".

Thanks to Ingo and all. In the end, I consulted the customer, who wanted "thixotropic behaviour". Given your references, I think you were closest, so points to you but it would be good if you entered T.B. into the glossary, provided, of course, you do not strongly disagree.
