These terms are used on the back of a "Prüfungszeugnis - Landwirt" detailing the grades achieved in the individual exam sections. They are listed under Section 1: Fertigkeitsprüfung (practical knowledge/exam?) as well as under Section 2: Kenntnisprüfung (theoretical knowledge/exam?)

I am really at a loss here: organic production and animal production? This sounds a little far fetched for me.

I'd be grateful for any help!

The underlying question is whether this about the propagation/breeding of plants/animals or the Erzeugung of food from plants and animals, and I think it is the latter. If you look, for example, at the book called "Pflanzliche Erzeugung" described here:-

the book is described as present "Grundlagen des Acker- und Pflanzenbaus" - in other words it is about crop cultivation. So I think your headings are about growing crops and keeping animals for food.
