Innerhalb des Getreideanbaus hat sich Winterweizen als wichtigste Getreideart etabliert. Während im Jahr 1950 knapp ein Viertel der hessischen Getreideanbaufläche mit Winterweizen bestellt wurde, stieg die Fläche im Jahr 2005 auf über die Hälfte der Getreideanbaufläche an. Gleichfalls erfuhr der Anbau von Wintergerste im Jahr 1950 mit 9.100 ha oder 2,4 % der Getreideanbaufläche auf 74.000 ha bzw. fast 24 % der Getreideanbaufläche im Jahr 2005 eine bedeutende Ausdehnung. Diese Entwicklung ging vor allem zu Lasten des Roggenanbaus. Dieser umfasste 1950 noch knapp 132.000 ha und im Jahr 2005 nur noch 13.600 ha. Neben den beschriebenen Veränderungen im Getreideanbau hat sich vor allem der Rapsanbau – ebenfalls eine Mähdruschfrucht – ausgedehnt. Während im Jahr 1950 knapp 6.000 ha mit Raps und Rübsen bestellt wurden, waren dies im Jahr 2005 rund 57.900 ha.
