Ils ont une très grande persistance aromatique et un potentiel de vieillissement de plusieurs dizaines d'années, souvent nécessaire à leur plein épanouissement. Le vin y subit les heureux effets de l'oxydation : l'oxygène qui passe à travers le bois permet un premier épanouissement du vin. A l'astreingeance et à la dureté, succèdent la rondeur et le soyeux. Fabriqué en bois de chêne - bois résistant et vivant - le tonneau favorise la maturation et l’épanouissement du vin, à l’abri de l’air et de la lumière. Quant à la garde, il s'agit d'apprécier le temps de cave nécessaire à l'épanouissement du vin (et non pas le potentiel de garde qui est nécessairement beaucoup plus long). Les vins concernés sont les grands vins dits "de garde", de la qualité d'une A.O.C. village ou supérieurs And as for ageing, we are talking about the period necessary for the wine to be at its best (and not the potential length of time one can keep it, which is often much longer).
