Explanation:
Se non sbaglio questo piatto si prepara in Francia con i cosiddetti "pavé" di pesce, ossia tranci. Di solito si tratta di pezzi di pesce privati della lisca, con la pelle da una sola parte.
Dai un'occhiata ai siti. Ho trovato due ricette francesi in cui si spiega la preparazione, una italiana e un menu' di un ristorante in cui si propone un trancio "con pelle croccante".
