La définition de l’aire géographique est directement liée à l’historique du produit. En effet, dans les régions alpines du bas Dauphiné seuls les blés tendres poussaient; les troupeaux nombreux, moutons, chèvres, quelques bovins, donnaient du lait, donc des fromages et fournissaient la viande, met de luxe, réservé aux citadins fortunés. Les paysans portaient leur blé au meunier local qui ouvrait un compte en farine chez le boulanger. Celui-ci, en échange, leur fournissait pain et farine de blé tendre. On n’achetait rien, si ce n’était le sel, on échangeait son blé, on consommait les racines, les légumes qui constituaient la base de l’alimentation.
